Last week I shared an Island Living 365 recipe for healthy turkey chilli so this week I thought I would share our recipe for healthy turkey pie. No, that isn’t an oxymoron it is actually quite healthy and also very good if you are watching your budget.You may be fed-up of turkey after Christmas but please try this recipe as it will change your mind. It is very tasty, relatively cheap and very healthy so what’s not to love. Again this is one for the whole family. We just serve it with baked beans but serving it with green vegetables is also a winner.
To serve 4 you will need:
- 5oog pack of turkey mince
- 1 kg potatoes (white or sweet) peeled and chopped.
- 25g butter
- 3 large carrots peeled and diced
- 2 peppers (red or yellow) diced. 1 would suffice, you could even use frozen (400g)
- 1 onion peeled and chopped
- 1 large red chilli deseeded and chopped
- 250ml of hot chicken stock
- 1 tbsp smoked paprika
- splash of olive oil
- Mild Cheddar grated
First things first heat your oven to 180C (fan assisted) or 200C. Place your chopped potatoes into a pan of boiling hot water and and cook for 15-20 mins until tender. Then drain your potatoes, return back to the pan and cover with the lid. Allow them to sit for a couple of minutes, steaming. Then roughly mash your potatoes with your butter, adding seasoning if you like.
When your potatoes are cooking you should cook your peppers, onions and carrots in your olive oil over a medium heat.
This will take about 5 minutes, when it has all softened add your turkey mince, chilli and paprika. Cook until it has browned. Then add your stock bring it to the boil and reduce to simmer for 10 minutes until thickened.
Then transfer to an oven proof dish and top with your mashed potato. Put in the oven and bake for 20 minutes. Whilst it is in the oven grate a generous handful of cheese. Take the pie out of the oven and sprinkle on the top your cheese. Return to the oven for another 10 minutes. When it is ready it will be bubbling, with a yummy golden cheesy topping.
Take to the table and let everyone go pie-eyed for your pie.

My boys would love this. My youngest (15 months) struggles with meat but loves minced meat or slow cooked meat. This would be the kind of dish that he would throw his spoon away and just grab handfuls of it! 😜

Yes, my youngest is the same with meat! She will only eat slow cooked chicken or minced meat and she does love this dish. Thanks for dropping by :-)
