Thrifty and Delicious Broccoli and Sausage Pasta Recipe

This recipe is perfect for when you are trying to save the pennies. It might be thrifty but it still tastes delicious and you would not know that it is a budget recipe. Win! I made this the other day when I was craving comfort food but I didn’t want the calories. This dish was perfect. We had leftovers the next day and it tasted even more delicious 🙂 . Enjoy!

  1. As this is a thrifty recipe, we are using everything when it comes to the Broccoli. The stalks are actually really tasty and one of my favourite parts of the dish. Chop the broccoli florets off the stalk. Now remove the woody part of the stalk. Then half your stalks lengthways. You might then want to half them again.
  2. Place the stalks into a pan of lightly salted, boiling water with your chilli and sausages. Place the lid on and leave the to boil away for 5 minutes. Boiling the chilli seems to reduce the heat of it. This is perfect if you are making this recipe for little ones.
  3. While your pan is boiling away, hack or chop at your broccoli florets. You want nice bite sized florets.
  4. After 5 minutes remove your broccoli stalks, chilli and sausages. Wait for them to cool. In the meantime peel and chop your garlic and onion. Leave your water on the lowest heat. The water may look murky but this is your cooking water for the pasta and it will add a delicious flavour.
  5. When your sausage, garlic and broccoli stalk is cool enough to touch, finely slice them all.
  6. Place them in a large frying pan with a slug of your olive oil, on a medium heat. Add the fennel seeds and oregano, with a pinch of salt and pepper. Stir and fry for a couple of minutes.
  7. Once the sausage is lightly golden, stir in the garlic and onions. Cook until they are nicely softened-about 15 minutes. Make sure that you stir occasionally.
  8. Add the red wine vinegar and cook it away completely. Then pour in the tomatoes, breaking them up with your spoon. Half-fill the tin with water and add to the pan. Leave this to simmer for 15 minutes. In the meantime add your pasta to your water that you have saved, bringing it back to the boil and then reducing it to a simmer. Add your broccoli in with your pasta for for the last 5 minutes
  9. Drain the pasta and the broccoli. Toss through the sauce, mix in most of the parmesan cheese. Then grate a little extra on top. Yum! Perfect comfort but healthy dish.
